Adoption of Simply Gluten and Sugar free

As someone who is gluten and sugar free, it seemed quite natural that I’d want to adopt Amy. Amy is quite an impressive chica, just starting out in culinary school with a variety of recipes that she churns out regularly! I’m impressed, especially since I’ve fallen off the posting wagon as of late.

When I got Amy’s e-book to raise money for St. Jude’s walkathon, the granola bars caught my eye for 3 reasons.
1. A good friend died of leukemia when I was in elementary school
2. a year ago next week my labs and symptoms seemed to suggest leukemia. Thankfully I didn’t, but the weeks of fear, poking and prodding and hospitalization made it an abjectly miserable and memorable experience.
3. DH loves granola bars

DH eats a plethora of sugar/HFCS soaked granola bars, and it drives me bonkers. I’ve made him home made granola bars in the past, but alas, he’s complained that they’re sticky or don’t hold together well. However, Amy’s bars were a hit! I made them as directed except I used hazelnuts since it was a snow day and we were out of walnuts. They were study and flavorful, and kept well for weeks in a sealed container, which was a great plus. And most importantly, they passed the picky husband test. I made them again, even, and used cherries, chopped uncrystallized ginger and orange zest. Yum!

So thanks, Amy, for the recipes and inspiration. And I’m sure if people still want to donate to St. Jude’s through Amy or otherwise that they’d be gladly accepted.

Raspberry Divinity Tarts–Adopt a GF blogger

I haven’t gotten to adopt a GF blogger lately, but as soon as I saw Heather’s Raspberry Divinity Tarts, because I thought they were just about the cutest thing ever, my DH loves raspberries and I have a gob of raspberries growing right now!

They are SO cute. The only thing is that they are high maintenance and get all sorts of mushy and sticky once you uncover them and add the raspberries, so gobble them down. It wasn’t hard to talk people into it, and they do keep well in a sealed container. Everyone loved them, and I’ll certainly make them again! I followed the recipe, but had it preheated too high, so that’s why they’re a bit more tan than Heather’s. I filled them with a faux Nutella paste (ok, I confess, I wanted chocolate hazelnut paste and I think the rest of the recipe may well have been an excuse to indulge).

Sea, of Book of Yum, and her DH expecting a beautiful baby boy. Since it’s quite a trek to CA, a virtual baby shower seems a wee bit more practical. And oh, the dishes everyone is bringing!

gfgobsmackedkoreanpancakesKate of GF Gobsmacked has had a lot of practice welcoming a new one as of late! If you need a smile, check out her blog for pictures of her little sweetheart. She is bringing along her Korean Mung Bean Pancakes. They’re even kid approved, although Sea will have to wait a while until her sweetie is big enough!

appetizersall3Ricki of Diet, Dessert and Dogs is bringing along a variety of appetizers: almond feta cheese and Raw carrot and sunflower seed pate. Not only do they look amazing, but they’re even vegan, and the cheese is soy free, too.

Jenn, of Gluten Free Food Storage is bringing along Lentil Tacos! I don’t have a picture for this one, but it looks like a simple and tasty recipe, perfect for when you’ve got a new baby.

quinoacakeWendy of Celiacs in the House is making sure we get our fill of protein with quinoa cakes. She knows Sea well enough to know that she’ll surely whip up one of her fabulous sauces to go along with it.

garlic-asparagus-quinoaEmily was eager to recreate a quinoa recipe she had in San Diego, and she brings us her Garlic Asparagus Quinoa, which is perfect for Springtime.

divHeather of Celiac Family is bringing Raspberry Divinity Tarts that look totally delish. AND her rubber ducky meringues cookies are just beyond cute in my book. Heather, you get points for being super artistic and creative!!!

Angela of Angela’s kitchen sent in a great post for Hanana Banana Bread or mini muffins and even a pumpkin version of the same.  The banana bread was from her baby was little, and she’s got such cute flower shaped versions on her blog header!

Adopt a (yummy) GF blogger: Chickpea and Spinach curry

The picture of the Chickpea and Spinach curry really doesn’t do the yumminess any justice.  Like most curries, the beauty lies within…

This super yummy, vegan curry is part of Adopt a GF Blogger, the brainchild of Sea, of Book of Yum.     I’ve wanted to adopt Sea for ages, because I love her healthy, inventive, flavorful GF recipes that usually have an exotic flare.  The most fun part of all of this was going through her (extensive!) recipe index!  The hard part was finding just one to make…but now I’ve marked a couple more for future weeks.  Another great part of her recipe index is that she rates recipes, so that you can figure out which things absolutely HAVE to get made.

The recipe was wonderful, flavorful, and satisfying.  It was so perfect because I *had* to get GF aseofetida powder, and went through this process of hunting it down, then and then I only used it once (ya know, when you want it pretty much because you can’t have it).  So this gave me an opportunity to give it some more use! Another bonus was that I had a bag of frozen tomatoes from my plants last summer, and I’m trying to make my way through all of the frozen foods I’ve stored to make room for the vegetative goodness just around the corner!  Of course, using my own tomatoes made it taste better because anything you plant is just uniquely splendid…just ’cause.

I made the recipe as directed.  The only change I made was using arugula instead of spinach since the cute little market near me was out of spinach.  It was funny, really, how annoyed I was at first, and a good reminder of how much I take having beautiful, organic, fresh foods for granted!

Tomato salad: Adopt a GF blogger

I have long enjoyed the recipes and pictures from Kalyn of Kalyn’s Kitchen. Kalyn is the originator and a big promoter of Weekend Herb Blogging, a fabulous weekly display of herbs and unusual fruits and veggies. As an added bonus, she blogs on whole food, healthy, low glycemic recipes. Many of her recipes are naturally gluten free, so a big thank you to Kalyn!!!

I went to a conference last weekend but I forgot my lunch at home and came home ravenous. It was the perfect opportunity to make Kalyn’s Summer Tomato Salad with Avocado, Tuna, Cilantro and Lime. I even had all of the ingredients on hand, and used tomatoes and cilantro from my garden. It was the perfect set up since DH was out (silly guy hates tomatoes, avocado, tuna, and cilantro) and so I got to enjoy a few of my favorite things.

It was a great combination, and I enjoyed it thoroughly. Quick, easy, satisfying, and above all, delicious!!! Tuna is actually one of my guilty pleasures that I often avoid because of mercury (I have high blood mercury levels. Most people are not affected by having small amounts, and the FDA guidelines only cover pregnant women and children). So the next day I had leftovers with my savory crackers made with brazil nuts. Brazil nuts are high in selenium, and studies suggest that selenium actually can block the body’s absorption of mercury. What can I say, I like it when science is yummy.

Adopt a GF Blogger Roundup-July

I’ve taken time out of my grueling Olympic-watching schedule to pull the round up together.  It’s been fun, and thanks for participating!  Several new GF bloggers have joined in, like Anna and Hannah. Welcome!

On to the adoptees:

Mary Francis hopped in early with Egg Rolls (gluten free, of course), courtesy of Kate at Gluten Free Gobsmacked.  Even though she improvised, due to accidentally doubling the liquids, they came out perfectly.  You had me at flaky dough!

Hannah, of Hannah’s Harvest, is treating her pregant sweet tooth to yummy Oatmeal Date Chocolate Cookies from Mrs. Gf’s Blog.  The picture has me drooling!


Anna, with her new blog Gluten Free Anna, made Mary Frances’ GF Pizza. Despite having to make a last minute run for more cheese, her pizza turned out beautifully.

I adopted Ricki, of Diet, Dessert and Dogs, and went for a double header adoption and adaption.  I adopted her Spicy Cauliflower soup (yum!!!) and adapted her Maple Cookies (even yummier!). Both got rave reviews.  I even made the soup twice, due to a camera glitch.





Kimberly of Living Free, made Sally’s Easy Peasy Peanut Butter Chocolate Chip Cookies. She loved the fact that they were so easy and they disappeared quickly at her house!

Last, but certainly not least, Thomas adapted Lauren of Celiac Teen, because he’s inspired by her outlook and fashion sense! He made her zucchini bread. He made it dairy free, too. Doesn’t it look lovely?

An Adoption and an Adaption: Diet, Dessert and Dogs

I decided to adopt Ricki, and her (not so) little dogs, too, because I like her philosophy toward real, unprocessed foods and avoiding processed sugars.  She’s creative and not afraid to go out on a limb.  All of her recipes are even dairy free and vegan! Though she uses a lot of whole grains in her cooking, not all recipes are GF, but she does have a tag for GF recipes so they’re easy to find. A requirement for adoptions is to make a recipe as-is, or pretty close. With all of my restrictions, that’s easier said than done! So for the adoption, I made Ricki’s Spicy Cauliflower Soup. But I have also been on a huge baking kick lately, so I adapted her Maple Walnut Cookies to be GF with the following changes:

  • I increased the flour to 1/2 cup (actually, even 1 tsp or two more) and changed it from barley to brown rice
  • I used hazelnut praline paste rather than tahini (leftover from the last Daring baker challenge) since I’m allergic to sesame
  • I used just a tiny pinch of vitamin c crystals instead of the apple cider vinegar since I don’t do anything fermented
  • I reduced the maple syrup to 1/4 cup, since the paste was sweetened
  • I made a few without sea salt for a friend who can’t have any salt, and those turned out well, too.

I planned on using teff because I like the flavor and it’s quite a bit more nutritious than brown rice, but I’ve been on a baking binge lately and so I was out!  I might also try unroasted (light) buckwheat flour, or add in a pinch of mesquite.  Ya know, just for the sake of scientific experimentation.

They were delightful and cooked up beautifully! I will certainly make these again and play with variations.  Flax is very healthy, and I often avoid taking it because I’m not crazy about the taste.  These will give me good incentive :lol:

One thing, though…since you GF bloggers out there all seem to be getting pregnant, recommendations are to eat no more than 2 Tablespoons a day of flax seeds while pregnant.  So you can eat half a batch, but not  the whole thing!  At least not in one day. 8-)

Spicy Cauliflower soup

Summer time isn’t usually soup time, but I love soup.  It’s just so comforting and soothing, even when it’s 90 degrees out (or 93, I think, but who’s counting!).  The spices are a lovely mix.  I made it according to the recipe, but put in cauli stem instead of potato because *sigh* no potatoes for me, and used almond milk instead of soy.  I also have some in my freezer for the next rainy day!  I’m sure this will be a regular in our rotation in winter months.

Due to camera issues, I made the soup twice.  It ended up being a very good thing, because when I have a tummy ache, blended soups are the perfect thing.  The second time around, I blended in a few overripe apricots and the gave a subtle sweetness, and I added a little ground nutmeg on top.  I can’t wait to explore the different ways to enjoy Ricki’s soup!

Chocolate Rose Parfait–Adopt a GF Blogger

Adopt a GF blogger is the brainchild of Seamaiden of Book of Yum. I love it because I’m someone who is often inspired by the recipes I see on other websites, but I tend to morph them into my usual style and flavorings. This gives me the opportunity to sample someone else’s tastes and styles, which is great. And I’m happy to be the hostess of the July edition of Adopt a GF Blogger! More info is here.

I’ve always been a fan of things seasonal and tasty, and so I was happy to discover the Gluten Free Hippie’s recipe collection. It’s a combination of vegan and mostly raw dishes, although there’s a gorgeous looking cardamom grilled mango that will hopefully be in my near future! I like her approach of real, whole foods, beautiful colors, and vibrant pictures.

For “Adopt A GF Blogger”, I decided to go for the Chocolate Rose Parfait. I do love rosewater, but have never paired it with chocolate before, and now I wonder why! I wanted to garnish it with rose petals, but alas, my bushes have been petal-less since a big storm a few weeks back and are just starting to bud again. However, the raspberries really paired beautifully with the rosewater and brought a real richness of taste, and are a great way of starting off with the ingredient of the week for menu plan Monday.

The pudding was simple yet very creamy, satisfying and indulgent. It does seem that rosewater is a matter of personal taste, though. DH doesn’t like rosewater, which doesn’t make sense to me. I like it so much that I keep giving him things with rosewater and am surprised when he’s not a fan. However, his comments about the rosewater didn’t keep him from devouring his parfait, so they should be taken with a big fat grain or two of salt.
